Kelloggs – Cornflakes Recipes

This is the first in a series of posts involving Kellogg’s Cereal. Kellogg’s are world renown for their breakfast cereal. I am about to step past the milk in a bowl for breakfast and use different cereals each week to create recipes for you to try at home with your children, breakfast, lunch, dinner and snacks!

Kellogg’s sent me a hamper of cereal last week, with a little note saying – enjoy!

Cornflakes recipes

The challenge has started. Cornflakes recipes up first!

Cornflakes Chocolate Crunch Slice
Ingredients:
200g Butter
½ cup Sugar
1½ cup Plain Flour
¼ cup Cocoa Powder
2 cups Cornflakes
Chocolate Icing
Sprinkles or Mini Chocolate Chips

Cream butter and sugar until light and fluffy.
Sift flour and cocoa powder.
Mix into butter mixture.
Fold in cornflakes.
Press mixture into a lamington tray.
Bake in preheated oven at 180c for 15-20 minutes (until set).
When cooled, ice slice with chocolate icing and sprinkles.
Set in fridge for an hour.
Slice and serve or keep in airtight container for up to a week.

This is great for afternoon tea, or a little treat to pop into the lunchbox.

Cornflake Crunch Slice 1

Cornflakes Popcorn Chicken
Ingredients:
3 Chicken Breasts (chopped into small bitesize pieces)
2 cups Cornflakes
1 tblsp Paprika
1 tblsp chopped Garlic

Place chicken in a plastic bag with chopped garlic.
Mix together.
Whiz cornflakes and paprika together in a hand blender until a mixture of fine and small crumbs.
Place crumb mixture into bag with chicken and shake until coated.
Place on a oven tray in a single layer.
Pop into a pre-heated oven at 180c for 12 minutes.

Great to eat with home made fries for a “made at home” takeaway. Or just on its own in a bowl with some dip, while watching your favourite tv show.

Cornflake Chicken

Ensure your little helper is wearing their apron!

Cornflakes Banana Snack
Ingredients:
1 banana
½ cup Cornflakes (slightly crush with your hand)
Peanut Butter

Peel banana.
Slice into four pieces (easier to handle)
Spread peanut butter onto banana.
Roll in cornflakes.
Slice into smaller bite size pieces.
Eat immediately.

I made this alot when introducing peanut butter to my son – he was able to feel, squish and taste, knowing he can already eat banana and cornflakes, if he was allergic we would know straight away. Yes it is a little messy, best to use a banana that has been in the fridge. You can also crush the cornflakes up into a fine crumb. This is a great snack for your little ones especially using food picks, to explore with the different textures – crunchy and soft.
